Rocky Road Brownie Bars

My sweet Emma Kate, who’s 9, is at that age. You know the one. The one where they have discovered that sleepovers are actually a thing. But, thanks to her older sister, we no longer do sleepovers. They’re just too much. The kids stay up all night and I’m the one left exhausted and frazzled the next day. I knew there had to be a happy medium and realized that most of the fun of a sleepover is just getting to play together “late at night” in their pjs.

So, we now do “late overs”. Whenever I tell my parent friends, they either think I’m crazy or totally love the idea. We’ve had a couple of late overs and they’ve been lots of fun for the girls. Word to the wise? Limit the number of girls. Trust me on this one.

The kid(s) typically come from 6-9 pm and they have pizza, dessert and play or watch a movie and have popcorn. They wear their pjs and bring a pillow, blanket and stuffed animal. It’s a win win in my book.

I had picked up a pizza from Aldi a couple of days before but totally forgot to get any kind of dessert. Geez. No way I was going back to the store. As luck would have it, I just happened to read the back of the sugar bag as I was pouring it into the canister. Not sure who to credit since it was a store brand bag of sugar, but I do know it was extremely easy, hardly any mess and they were very soft and yummy!

Rocky Road Brownie Bars

Ingredients

  • 3/4 c butter
  • 1 1/2 c sugar
  • 4 eggs
  • 1 c flour
  • 1/4 c cocoa
  • 1/2 t baking powder
  • 1/2 t salt
  • 2 c miniature marshmallows
  • 1 c chocolate chips
  • 1/2 c chopped pecans or walnuts

Instructions

  1. Preheat oven to 350 F.
  2. Cream butter and sugar; beat in eggs.
  3. Combine and thoroughly mix flour, cocoa, baking powder and salt; beat into creamed mixture.
  4. Fold in marshmallows, chocolate chips and nuts.
  5. Spread into greased 13 x 9 baking dish.
  6. Bake 35-40 or until a toothpick inserted in the middle comes out clean.
  7. Cool 15 minutes before cutting into bars.
