Mini Chicken Pot Pies


Mini chicken pot pies are hands down one of my kids’ favorite meals. Super easy, super quick and not a lot of ingredients. It’s kind of like “cheater pot pie”, but apparently it’s yummy since when we do have leftovers, my kid’s will eat them cold from the refrigerator!

The original recipe was from Pillsbury, but I changed it up a bit. Here’s the link to the original recipe.

Kid Friendly Mini Chicken Pot Pies


  • 1 can cream of chicken soup
  • 1 12.5 oz can chicken OR 1 large, cooked and shredded chicken breast
  • 1 10 oz bag frozen peas and carrots
  • 2 cans refrigerated biscuits
  • 1 cup shredded cheddar
  • Salt & Pepper to taste


  1. Preheat oven to 350
  2. Grease 2 muffin pans and line each cup with a biscuit, making sure to bring the sides up high enough to hold the filling.
  3. Combine soup, chicken, veggies and cheddar. Salt & Pepper to taste.
  4. Fill biscuit "cups" with chicken mixture and bake according to biscuit can instructions.
